The Organisers of a 100km ultra-marathon in Anglesea this weekend have been questioned by parents and health experts for allowing schoolgirls as young at 14 to compete in the strenuous race that winds through beaches, forests and along cliffs.

most times, i don’t believe that i have enough variety in my food decisions. and i certainly don’t plan meals very well when grocery shopping. so what i’m stuck with is scouring the interwebs for recipes that include whatever ingredients i have in the cupboard or fridge. tonight i made some badass black bean hummus and tortilla chips. easy recipes off food.com.
black bean hummus:
add tsp minced garlic, can of black beans (with only 2 tbsp of liquid), 2 tbsp of lime juice, 1.5 tbsp tahini, .5 tsp cumin, .5 tsp sea salt, 1/8 tsp cayenne pepper.
process until smooth.
add additional seasoning and liquid to taste.
garnish with paprika (they had an option for chopped black olives, i did not partake).
preheat oven to 350.
took a whole pack of 8″ tortillas stacked together, then took a pizza cutter and sliced into 8 equal pieces.
covered both sides of each slice with olive oil. laid on a couple cookie sheets. sprinkled sea salt on it.
bake for about 15 minutes or until brown/crispy.
